Cooperates, coordinates and communicates with other Departments in matters concerning receiving, accounting for and controlling the cost of food, beverages and general supplies.

A little taste of your day-to-day:

Every day is different, but you’ll mostly be:

  • To receive items as per approved market list and purchase requisitions.
  • All policies and procedures with regards to market list to be followed strictly.
  • Qualities to be checked as per purchase requisitions, market lists and local purchase orders.
  • Extra care to be made with regards to the quantity.
  • Make sure to check the required temperature levels at all times when receiving frozen all chilled food and beverage items. If an item is found to be below the standard temperature level, inform Executive Chef, Purchasing Manager or Food & Beverage Controller for necessary action.
  • With regards to the fruit and vegetables, fish, dairy products and meat items, inspection should be made by Executive Chef/Sous Chef or Chef de Partie for quality.
  • Take great care and cautious with regards to the expiry dates.
  • Compare all deliveries with market quotation sheet/purchase orders, etc.
  • Be familiar with brands, types, sizes and quantities in use at the hotel.
  • Give a list of items not received upon receiving the market list, local purchase order, outside purchase requisitions.
  • Give, at least, on a weekly basis, all items not received as per the food and beverage purchase requisitions.
  • Check for the approval of the Department Head, Manager, Finance and Business Support
  • Give a list of pending local purchase orders under custody to the Purchasing Manager and Accounts Supervisor.
  • Price list should be referred to whenever an item is received.

  • Being attentive to Guests
  • Accurately and promptly fulfilling Guests requests
  • Anticipate Guests needs
  • Maintain a high level of knowledge which affects the Guest experience
  • Demonstrating a ‘service’ attitude
  • Taking appropriate action to resolve guest complaints
  • Appreciate the dynamic nature of the Hotel industry and extend these service attributes to all internal customers
